Raw Vegan Pad Thai | Creamy & Delicious

I had so much fun with this recipe. I am definitely partial to Thai food (Actually, it is my favorite!!). Pad Thai is my go to comfort-food, with its creamy, sweet sauce and loads of vegetables. I have been missing it lately and thought I would recreate a raw vegan version (as I am doing a small cleanse at the moment!).

This recipe took very little prep, and even less time to eat! It was so good, I gobbled it right up!

Let’s jump right in, shall we?

Grab the Ingredients

I will just vaguely list the ingredients here and then will post the actual recipe and instructions down below!

Base:

  • Zucchini
  • Carrots
  • Red Bell Pepper
  • Green Onions
  • Mushrooms
  • Cilantro
  • Microgreens
  • Cabbage

Peanut Lime Sauce:

  • Tahini
  • Unsalted/Unroasted Peanuts
  • Lime
  • Dates
  • Tamari
  • Garlic
  • Ginger

Grab Your Tools

You don’t need many for this meal, fortunately.

You will need:

  • Cutting Board
  • Good Knife
  • a Spiralizer (if you have one), a parer (if not) and a knife (if you don’t have either of the previous two!)
  • Blender/Blender Cup or Food processor to make the dressing.
  • Big bowl to mix everything in
  • Chopsticks (totally optional, but good practice on eating slow for me!)
  • a Hungry Mouth (joking, but not really)

I try to show you in the video that you can make zucchini noodles by using a spiralizer, a parer or even just a knife. If you use a parer, try to find longer zucchini to mock noodles. If you use a knife you can create your noodles in whatever shape pleases you!

Raw Vegan Pad Thai

Ingredients

Base

  • 2 zucchinis spiralized into noodles
  • 2 carrots shredded
  • 1/2 red bell pepper sliced thinly
  • 1/2 cup mushrooms sliced thinly
  • 2 green onions chopped
  • 1 cup cabbage sliced thinly
  • 5 sprigs cilantro
  • 2 tbsp microgreens optional

Peanut Lime Sauce

  • 2 tbsp Tahini
  • 1/2 cup unroasted, unsalted peanuts
  • 2 tsp Tamari
  • 2 Medjool Dates (can use maple syrup as well)
  • 1 thumb ginger
  • 1 clove garlic
  • 1/2 lime

Toppings

  • Sprinkle Hemp Hearts
  • Sprinkle Sesame Seeds
  • More Lime Juice

Instructions

  • In a large bowl add all Base ingredients
  • Next put all sauce ingredients into blender or food processor until smooth. Add water to adjust consistency.
  • Pour sauce over the base and combine well.
  • Transfer to eating bowl (or just eat right out of mixing bowl!)
  • Top with hemp hearts, sesame seeds and lime juice
  • Enjoy!

  • AHH I LOVE IT. I’ve been looking up good vegan dishes that bring some spice from other cultures. I personally lovee Pad Thai, but my girlfriend has never eaten it before. This dish is literally the best thing I’ve seen all week! 

    I’m just trying to get me and my girlfriend to eat healthier in general. I’ve always been PRETTY good (but not great) and my girl’s diet has been terrible lol. But this recipe is full of veggies, vitamins and nutrients. Also love the video. i learn best by watching. I’m making curry tonight, but tomorrow I will definitely be trying this recipe!       So glad you enjoyed! I really hope you both enjoy the recipe! If you want to try the cooked version you would saute all of the veggies and add in noodles of your liking instead of consuming this raw! I hope you enjoy it either way!

    I enjoy reading your healthy recipe. Raw foods such as salad type items are much nutritional then cooked food. In our traditional food habits, we have lots of uncooked food items similar to this one. This type of foods are my favorite and I enjoy it eating daily. Actually, I am from North Eastern part of India and our food habit is very much similar to that of Thailand, Burma, etc. We also used the Chinese chives. You can have it in either way raw or cooked. Thanks for sharing this healthy delicious recipe.

    • This is so very true. Eating foods closest to their natural form is the most healthiest (obviously, some foods cannot be eaten raw and must be consumed cook, but these foods should only be consumed irregularly). I enjoy Indian cuisine so, so very much. Perhaps you have just inspired me to create a raw vegan Indian dish next!

  • I have been learning to make simple pastries and pasta recently, especially for children. This specific recipe looks very easy to do. There are many kinds of vegetables in it and it is so colorful. I think it will be delicious too. I do believe this recipe will support weight loss. I am someone searching for that! It seems like I will have to try it. Maybe, I will have a new talent!

  • Looks like anything can be turned into Pad Thai nowadays. I normally take those that are loaded with shrimp and chicken, but this raw vegan recipe is an interesting take. It’s a good snack to make during the weekends without loading all the carbo. Not a big fan of cilantro so I will omit that, but the rest of the ingredient is super healthy.

      You know, it is just so darn good that you have to make it your own to fit your lifestyle and this recipe does just that! Cilantro is a strong herb (which I love), and I know it is not for everyone– it will be totally awesome without it too!
