Raw Vegan Gooey Salted Caramel Bites

We celebrated my mother’s birthday recently, and upon doing so, created many delicious vegan recipes.

Perhaps my favorite creation were these ooey-gooey Salted Caramel Bites, made with only 3 ingredients! The best part– by using a single serve blender cup, the motor heats them up as though they are fresh out of the oven (a raw vegan’s dream!).

The Ingredients

Like I mentioned before, there are only 3 ingredients– perfectly simple!

Almond Butter

Medjool Dates

Himalayan Pink Salt

I just want to briefly discuss the benefits of each ingredient before we dive right into the recipe makin’.

Almond Butter

Fresh ground is always the best, but if this isn’t an option just make sure there is no added sugar!

Benefits:

  • Almonds are loaded with Vitamin E (great for cell protection, especially for the heart and eyes!)
  • Very high in the mineral Manganese– which is great for bone health
  • Balances blood sugar levels
  • High in fiber and protein, keeping you fuller, longer (aids in weight loss)

Medjool Dates

If you have surfed through any of my other recipes, then you know that I have a strong love for dates, especially medjool dates. They are ooey-gooey, caramel bits of goodness– the perfect treat! My favorite company to buy from is 7HotDates. Another great alternative is buying them in bulk through Amazon here.

Benefits:

  • Natural Sweetener
  • Loaded with Potassium (great for working on/off setting cramps!)
  • Excellent source of fiber– keep you fuller, longer (also, no constipation!)
  • Can I say, delicious? Delicious.

Himalayan Pink Salt

When people hear salt, they think table salt and table salt is not good for you. This is true because table salt is chemically processed, wiping away all nutritious value of it and adding harmful chemicals–yuck! Fortunately, Himalayan Pink Salt does not fall into that category. The benefits of pink salt are incredible, so let’s check them out.

Benefits:

  • Supports respiratory health
  • Improves skin
  • Balances blood sugars
  • Prevents muscle cramps
  • Regulates sleep and mood

Even with all of these benefits, a little goes a long way and for this recipe we are only using a sprinkle!

Roll ‘Em, Sprinkle ‘Em, Pop ‘Em (In Your Mouth)

I’ll say it again, these are the perfect little guilt-free treats! Simple ingredients, simple directions and simple decision of eating the whole batch!

Salted Caramel Bites

Ingredients

  • 1/2 Cup Almond Butter fresh ground
  • 6-8 pitted Medjool Dates depending on size
  • 1/4 tsp Himalayan Pink Salt just a sprinkle over the top

Instructions

  • Combine the almond butter and dates into food processor
  • Combine until 'dough' like
  • Roll into Balls
  • Sprinkle with Himalayan Pink Salt
  • Enjoy!

  • As a cook and a baker and a creative maker, there is one thing I treasure above all else in the kitchen 99% of the time and that is the joy of keeping things simple! 

    These treats are delicious, nutritious and so easy to make!  

    Although, I love the flavor of dates they are too sweet for me to eat straight like some folks do so, I solved that by making it the sweet in treats.  Your Raw Vegan Gooey Salted Caramel Bites hit all the flavorful sweet spots!

    The recipe you provided us here is of the like that if you didn’t label it raw-vegan everyone would be asking ‘hey, what’s in these?’ because they loved them and, not because they were terrified of loving something raw/vegan ha! 

    • I could not agree more! Whenever I am inspired by other bakers/cookers, they all seem to have the simplest recipes in common. I want to make sure that anyone can make these recipes, as I know not everyone has access to asian markets, bulk supermarkets, etc.

      I am a date fanatic, but I totally understand where you are coming from! 

      Also, YES to the raw-vegan part. People always assume I cannot have anything delicious anymore, which quite the contrary! Most desserts are vegan already and with a little finesse,it is quite simple to turn any recipe into a vegan one!

  • I am hoping to try this on my own especially the Almond butter; I appreciate the fact that you listed out the ingredients involved and the instructions are very easy to understand, I think this is what I can try out because I am salivating already reading about  the delicious recipe.

  • Oh, yum! This recipe sounds amazing and I am going to make it! What is the carbohydrate count – both full and nett? The reason I ask is a friend of mine is on the Keto diet and these sound like she could eat them! I will make them on Saturday, they can be my take along to a market stall. Thanks so much for the recipe, it looks amazing and easy.

    • I would love to say these were low carb, but dates are all carb (the good kind, but not acceptable for keto!). I would recommend her trying to substitute the date for some shredded coconut. They may be a bit more dry, but tasty none the less!

      This is such a simple recipe– very hard to go wrong! You only need just a few minutes to make them, you could even double the batch and store in freezer to minimize time spent!

  • Wow.. Nice recipe there. I would like to try it in my kitchen, I am not a good cook myself I must admit that, but I always try as much as possible to follow the recipe. I know it’s not going to be perfect at first, but I know with time I will improve more on how to make it. And moreover is just a few ingredients I need to put together to make these delicious caramel bites.

  • Looking at the pictures, I already want to eat them up. I love this recipe because it can be prepared by someone who is a vegan and really don’t want to spend much. The recipe is top notch and I will definitely try them myself and will surprise my wife with them. I hope the carb content isn’t much?

  • These salted caramel bites sound delicious.  I love almond butter and dates.  I take it from the picture that it is easy to roll this snack up into small separate balls.  It does not get too sticky on the hands?  I’m glad to hear of some of the health benefits of taking Himalayan salt orally.  I was mostly aware of what it did exteriorly until this point.  The container of Himalayan salt I have will be used more frequently without worry.

    • Haha– it can get too sticky if the ratio of almond butter and dates is off, but with this recipe you shouldn’t have any issues with that!
